The delicate hue of this charming rosé is named after the “Oeil de Perdrix” or “partridge's eye”, a particularly pale shade of pink which is typical of the ethereal rosé wines from the south of France. This rosé is made in California according to traditional Provencal winemaking techniques which have been used in that part of France for generations. To create a rosé which is both fresh and full of flavour, the grape must is left to macerate with the skins for a short period which gives the wine its characteristic light pink hue. The must is then fermented in a temperature-controlled tank and then aged on the lees for two months to add a soft, smooth texture while preserving the delicate aromatics. On the nose there are attractive hints of wild strawberries, red cherries, mint and dried Mediterranean herbs. Take a sip and you’ll be rewarded with a mouthwatering freshness, light and elegant body, and lingering red fruit flavours seasoned with hints of zesty mandarin and pomegranate blossom. The vibrant personality of this delicious rosé makes it ideal for enjoying with simple summer dishes like caprese salad, pan-fried salmon steaks, or a generous platter of fruits de mer.
