Drink it now or cellar for up to 10 years. It is recommended to decant it for an hour. Antiyal, was started way back in the 90s, in Maipo Valley in Chile by couple Alvaro and Marina Espinoza. They've got a little farm-like system where the animals help out by providing fertilizer, and everything just works together like a small, self-sustaining ecosystem. Alvaro is a big deal in Chile for bringing biodynamic winemaking to the table and for making some seriously good Carmenere wines. When they pick the grapes, it's all done by hand. Then, they throw them into small steel tanks to let them ferment with indigenous yeast. After that, the wine chills out for 25 days. Once it's all done fermenting, the wine is aged in used French oak barrels for about 10 months. Pura Fe Carmenere has got a dark, deep color, and it smells like a mix of a fruit salad with blackcurrant, blackberry, blueberry, a touch of violet, some licorice, cocoa, and sweet spices. When you take a sip, it's rich and smooth, with a hint of freshness that keeps things from getting too heavy. The finish is long and tastes like mocha, lingering on your taste buds. It is a wine that you can totally enjoy now or save for later. If you wanna get the full taste experience, maybe let it breathe for about an hour and pair it with a big plate of braised red meat or a juicy steak.
