Bibi Graetz began producing wine in Tuscany in 2000, sourcing grapes from a vineyard around the medieval castle of Vincigliata, purchased by his family in the 1960s. Today Bibi, a character gifted with great creativity and self-taught in wine, is considered one of the most eclectic and interesting producers in Tuscany, obtaining excellent reviews and awards over the years. His company covers approximately 50 hectares of vineyards, in which essentially native vines of the region are grown. Testamatta is a 100% Sangiovese wine. The grapes are sourced from 5 vineyards located in the municipality of Fiesole, with an average age of 80 years, on soil rich in clay and marl. After vinification in barriques with native yeasts, the finished wine is aged for 2 years in French barriques (of which 10% are new) and then left in the bottle for 6 months. The wine has a bright ruby-red color. Its aromatic profile is broad and captivating with notes of red and black cherry, some hints of sweet spices, and nuances that recall leather and tobacco. On the palate, it is characterful, complex, and full-bodied. It has firm tannins and a marked acidic streak. The finish is long and aromatic. It is ready to drink now, but can remain in the cellar for several years. It goes perfectly with grilled or roasted red meat.
