Drink it now or cellar for up to 10 years. No need to decant but best to open it half an hour before service. Founded in 1991 by Beppe Caviola, the Ca Viola winery is located in Dogliani, Piedmont. The first wine produced was a Dolcetto, with grapes from a rented vineyard. Since then, following the success of this wine, the business has expanded to approximately 12 hectares of vineyards located near Montelupo Albese. The Nebbiolo grapes come from several of the estate's vineyards, located at an altitude of approximately 450 meters above sea level on shallow, sandy-loam soils. After harvesting, fermentation takes place at a controlled temperature in stainless steel tanks, with 10-20% whole bunches. The finished wine then ages for 8-10 months in large barrels. Its name derives from the Counts Rangone of Montelupo, where most of the Ca' Viola estate's vineyards are located. Ca Viola Rangone Langhe Nebbiolo is an elegant and energetic wine that, in the glass, reveals an intense ruby ​​color with garnet hints. Its aromatic profile is fragrant and complex, with notes of small red fruits, violets, and hints of undergrowth and damp earth. On the palate, it is robust and austere, taut and fresh, with smooth, well-integrated tannins and a long finish that evokes fruity notes. It is excellent with braised beef and pasta dishes seasoned with game sauces.
