Domaine de la Motte Vau-Ligneau Premier Cru is a textural, elegant Chardonnay that combines the bolder style of the Michaut vineyards with the more restrained character of Vau-Ligneau. Domaine de la Motte is a 25-hectare, family-run estate, passed down through generations since 1950, known for producing refined, high-quality Chablis. Production The Vau-Ligneau Premier Cru vineyard is one of Chablis’ more recent elevations, recognised for consistently superior wines. The 40-year-old Chardonnay vines grow in Kimmeridgian soil with a south-easterly exposure, giving the wine pronounced minerality. A deep layer of white clay adds length, finesse, and elegance. After pressing, gravity gently separates the juice from skins and pulp. Around 35% of the wine is fermented in 228-litre oak barrels, with the remainder in stainless steel, undergoing malolactic fermentation for five weeks. The oaked portion remains in barrel for 12 months. Tasting notes Gentle citrus, sweet hay, and toasty aromas on the nose lead to a taut, mineral-driven palate with savoury toast and textured citrus flavours. This Chablis is clean, refined, and wonderfully moreish, finishing with lingering minerality. Food match Pairs beautifully with richer fish dishes, shellfish, chicken, and creamy sauces.
