Founded in 1945, the Patrick Javilier estate is located in the Côte de Beaune, specifically in the famous Burgundy village of Meursault. The vineyards extend over approximately 11 hectares and are planted primarily to Chardonnay. Today, the estate is managed by Marie Javillier, Patrick's daughter, with the help of her brother-in-law, Pierre-Emmanuel Lamy. The Chardonnay grapes come from various vineyards in the Côte d'Or on the southern slopes of the Côte de Beaune, located on clay soils. Vinification and aging take place in oak barrels to add complexity and roundness to the wine. The Bourgogne Côte d'Or Cuvée des Forgets is a lively, fresh, and elegant wine with a fragrant and broad aromatic profile. On the nose, it reveals initial notes of white and yellow fruit, followed by hints of wildflowers and toasted notes. On the palate, it is energetic, juicy, and rounded. It has a refined character and a medium body. It is balanced, with a distinctive and refreshing acidity that extends into a long finish that recalls light toasted notes. It makes a delicious aperitif and is excellent with white fish and poultry. A must-have pairing is with sole meunière.
