Drink it now or cellar for up to 10 years. No need to decant. Domaine Séguinot Bordet is a Burgundy family-run winery founded in Maligny, in the Chablis region, in 1590 and currently managed by Jean-François Bordet. Its wines are widely recognized for their great purity and expressiveness, and their excellent value. The Chardonnay grapes come from the estate's vineyards. The vines, between 25 and 40 years old, are planted on typical Kimmeridgian soils and enjoy south/southeast exposure. After harvesting and traditional vinification, the finished wine rests in tanks. The result is a lean, mineral, and distinctive white, the quintessential Chablis wine. In the glass, the wine reveals a luminous and brilliant pale gold color with subtle greenish highlights. Its aromatic profile is fresh and lively, with notes of citrus and green apple, followed by hints of fresh grass and white flowers on a distinctive mineral background. On the palate, it immediately displays sharp acidity and a marked mineral character. It is fresh, ripe, and thirst-quenching. It has a good complexity of flavors and a long finish that blends mineral and saline touches with a citrus freshness. It's the ideal wine to pair with oysters, sushi, or goat cheese salads, but it also makes an elegant aperitif, on its own or with seafood appetizers.
