Fernando de Castilla Vermut Red is a magnificent revival of Jerez's lost vermut tradition — a rich, complex and deeply characterful aperitivo crafted from Palomino and Pedro Ximenez grapes, aged for eight years in barrel and infused with 27 carefully selected botanicals. This is Spanish vermouth at its most authentic and ambitious. Why You'll Love It Jerez was once celebrated for its vermut, until production faded away in the late 1960s. Fernando de Castilla never relinquished their registered vermut producer status, and when the category enjoyed its renaissance in Spanish and UK bars, they were ready. Aged far longer than most — eight years in barrel — and blended with 27 botanicals, this is a vermut of extraordinary depth and complexity that rewards those who appreciate the real thing. Production Palomino (70%) and Pedro Ximenez (30%) grapes are pressed and fermented in stainless steel before being aged in barrel for around eight years, developing remarkable richness and concentration. The wine is then infused with 27 botanicals to create its signature aromatic complexity. Winemaker: Maribel Vergara.
