Drink it now or cellar for up to 5 years. No need to decant. Domaine Francois Carillon was founded in 2010, when Francois left the family business and divided the estate's vineyards with his brother. Today, his farm extends over 16 hectares, where the main crop is Chardonnay, with small amounts of Pinot Noir and Aligoté. Cap au Sud is a wine produced with Chardonnay grapes from southern France and made in the Puligny Montrachet cellar. The idea was born in 2021, after three years of spring frosts in Burgundy that caused crop losses. Looking for other places to produce his wines, Francois Carillon started the Cap au Sud project. The grapes are supplied by a vineyard over 35 years old, located about 250 meters above sea level at the foot of Montagnac, on clay and limestone soils. Fermentation takes place in oak barrels and the finished wine rests in the barrels for at least a year, before being bottled according to the lunar cycles as required by the principles of biodynamics. This seductive white wine reveals an intense and fruity aromatic profile with aromas of stone fruit and apple, hints of honey and mineral notes. On the palate, it is fresh and round, powerful and soft. It has a well-balanced acidity and a creamy texture. The finish is long and mineral. It is a wine of good character that makes an excellent aperitif but goes well with seafood risotto or fresh cheeses.
