Great spirits come from great ingredients. Griffo Distillery mill organic corn and rye directly into their kettle and keep the grains in through distillation. This creates a soft and nutty, corn palate with a spicy rye finish. We then age the whiskey in local barrels with both American and French oak to tune the curve and balance the spirit. Every single drop of water that is used in our process is collected and given to local farmers. Now that is a community spirit....or water! On the nose this is soft vanilla, hazelnut and light tangerines. On the palate we start off with cereal notes and slight nuttiness from the organic grains. This develops to notes of marzipan, peach custard and rich caramel. It comes to a finish that gives a spicy rye, cigar box, ginger and a lingering sweetness. Note that someone has not taken a big swig of your new whiskey, this is presented in an American 75cl bottle but with UK standard 70cl measure.
