Founded in 1980 by former engineer Jean-Michel Guillon, Domaine Guillon et Fils is a winery in Gevrey Chambertin that produces prestigious Burgundy wines from its approximately 40 hectares of land. The estate is now managed by Jean Michel together with his son Alexis, who joined him in 2001. Cote de Nuits-Villages Queue de Hareng is an elegant red wine made from Pinot Noir grapes from a plot located north of Gevrey-Chambertin, in the municipality of Brochon. The harvest is manual and, after the vinification operations, the wine rests in new oak barrels. The result is an expressive wine in which the use of oak is perfectly balanced, revealing a broad and fresh aromatic profile with notes of ripe raspberry, black cherry, and ripe berries followed by spicy and licorice hints. On the palate, it is juicy, full and silky. It has a smooth texture and well-integrated tannins. It is concentrated with a long and persistent finish that recalls spicy notes. Leave it in the cellar for a few years, or pair it with roast goose, braised rabbit, or chicken escalopes with mushrooms.
