Domaine Jean-Paul Picard et Fils is a historic, family-run estate that has remained in the same family since 1750, making it one of the oldest producers in Sancerre. Today the domaine cultivates 14 hectares of vines, all located on the slopes of Bué, one of the most prestigious terroirs in the region. Their philosophy combines centuries of tradition with a modern, artisanal approach. Practising lutte raisonnée to preserve soil health, they favour manual harvesting and vinify each parcel separately to capture the unique character of its terroir. In their modern gravity-fed winery, fermentation with indigenous yeasts produces wines of great precision, expression, and complexity. Viticulture The vines, averaging 30 years old, grow on clay and limestone soils and yield around 55 hl/ha. Vineyard work follows lutte raisonnée , a pragmatic and sustainable approach where chemical treatments are used only when absolutely necessary. Biodiversity is encouraged through cover cropping, regular ploughing, and the use of natural manures and composts to enrich the soil. Grapes are always harvested by hand to ensure optimal quality. Winemaking Harvested grapes undergo gentle pneumatic pressing before cold racking. Fermentation is carried out with natural yeasts in stainless steel vats, where the wine is aged sur lie for a minimum of 3–4 months to enhance texture and flavour. No oak ageing is employed, preserving freshness and purity. Tasting Note Pale gold in colour, the wine opens with vibrant aromas of exotic fruit and citrus, complemented by delicate notes of orange blossom and wet stone minerality. The palate is full-bodied yet refined, offering balance, crisp acidity, and a clean, refreshing finish.
