Founded in Chablis in the late 1920s by Abbé Balitrand, La Chablisienne is a wine cooperative that brings together around 300 producers and 1,200 hectares of vineyards, certified organic since 2013, and distributed between Grands Crus and Premiers Crus, with various plots also in Chablis and Petit-Chablis. The Chardonnay grapes come from a Premier Cru plot located on the left bank of the Serein River. They are characterized by the typical Kimmeridgian clay-limestone soils of the region. The vines, 25 years old, enjoy a south-east exposure. After harvesting and fermentation in vats and barrels, the finished wine rests on its lees for about a year. In the glass, the wine reveals an intense color with pale gold tones and silver reflections. Its aromatic profile is elegant and broad with citrus notes of lemon and grapefruit, floral scents, light notes of vanilla, and a final hint of flint. On the palate, it is dynamic, fresh and lively. It is juicy and rich with a perfectly integrated acidic vein and a complex and mineral finish. It is a very gastronomic wine and pairs well with both fish and meat. Try it with roasted prawns, risotto with scallops or mushrooms, or with veal ossobuco served with risotto Milanese.
