Drink it now or cellar for up to 15 years. It is recommended to decant it for an hour. Founded in 1999, Mitolo is an Australian winery in McLaren Vale owned by the Mitolo family of Italian origin. The company grows international and Italian grape varieties and produces three lines of wines: a collection of classic wines, a collection of small-production wines, and an entry-level line. The Shiraz grapes come from Lot 10, Lot 11, and the Home Block of the Lopresti vineyard, planted on gray-brown sandy clays, fissured brown clays, and black Biscay clays. Here, the vines enjoy a climate tempered by fresh sea breezes from the Gulf of St. Vincent, with cool nights that favor good acidity in the wine. After harvest and temperature-controlled vinification, the wine ages for twenty months in French and American oak barrels (70% used, 25% new French oak, and 5% new American oak). The acronym G.A.M. comes from the names of Frank Mitolo's children: Gemma, Alexander, and Marco. In the glass, the wine reveals an intense purple-red color and a generous and broad aromatic profile with notes of plum, cassis, and cherry, black pepper and sage, mocha, and chocolate. On the palate, it is rich and mature, concentrated, and elegant. It has lively acidity and fine, well-structured tannins. It is full-bodied, juicy, and balanced with savory notes that extend into a long finish. Try it with lamb tagine or beef Wellington.
