Paco Rodero and his wife Conchi Villa are the founders of the Pago de los Capellanes project, an estate in the Ribera del Duero wine region, a short distance from Pedrosa de Duero. The name of the winery refers to the historic vineyard of the native Tempranillo variety which centuries ago belonged to the town's chaplains (Capellanes in Spanish). The Tempranillo grapes are selected and harvested from vineyards that are over eighty years old, located in Pedrosa de Duero on low-production clay-limestone and stony soils, approximately 800 meters above sea level. After fermentation, at a controlled temperature of 28 degrees, and malolactic fermentation, the wine rests for 14 months in French oak barrels. Pago de los Capellanes Reserva is an elegant and complex wine with a ruby color and a broad and intense aromatic profile. The nose reveals notes of ripe red fruits (cherry, blackberry, currant, and plum), followed by hints of coconut and sweet spices. On the palate, it is balanced with a lively freshness and a powerful character. It is juicy and silky with ripe and soft tannins. The finish is long and recalls toasted notes. A must try with suckling pig or with grilled lamb.
