Enjoy it now, or cellar for up to 10 years. No need to decant before serving. This Grande Reserve wine is a blend of the three main Champagne grapes: 50% Chardonnay, with 25% each of Pinot Noir and Pinot Meunier. It also includes 35-40% of reserve wines, allowing for great consistency across years, and a mature character. Look for a bouquet of green apples, pure lemon, and white flowers, with tertiary notes of brioche as it opens up. The company behind Champagne JM Gobillard et Fils was officially founded in 1983 by the four sons of Jean Marie: Philippe, Jean François, Thierry, and Françoise. Over the first few years, they expanded the winery’s cellar and opened a tasting cellar, before building a site in Dizy. This would become their second home, after the small village of Hautvillers, where Gervais Gobillard first planted vines in 1933. The fruits for this wine were harvested from Premier Cru sites in Hautvillers (the home of the great Dom Perignon), Dizy, and Cumières. It is velvety and generous in the mouth, with ripe flavours of orchard fruits, citrus, and classic Champagne notes of buttery pastries. It spent a minimum of 3 years in the cellar before release. Consider pairing this Premier Cru wine with a creamy chicken dish, seafood, or soft cheese.
