Acquired in 1992 by the Paux-Rosset family, Château de la Négly extends over approximately 75 hectares in the heart of the La Clape massif in Occitanie. Since the 1990s, Jean Paux-Rosset and his wife have undertaken a complete overhaul of the winemaking process and introduced sustainable farming practices, restoring the estate to its former splendor and producing top-quality wines. La Falaise Blanc is a blend of Chardonnay, Grenache Gris, and Sauvignon Gris grapes from the estate's vineyards, located in the La Clape Massif, between Narbonne and the sea. Here, the vines are rooted in sandy-loam, Miocene clay soils, and benefit from an exceptional Mediterranean microclimate, characterized by low rainfall and refreshing sea breezes. After manual harvesting and temperature-controlled vinification, the finished wine ages in demi-muids for 8 months on the lees. The result is a smooth and round wine, generous and aromatic. On the nose, it reveals a fragrant and broad aromatic profile with notes of citrus and yellow fruit interspersed with hints of almond and butter. On the palate, it is full-bodied and deep, rich and concentrated, with well-balanced acidity and a fresh, persistent finish. Try it with fish in white sauce, roast chicken, or Saint-Nectaire cheese.
