Founded on an estate granted in 1836, Dakota Shy is today a renowned Napa Valley winery producing fine Cabernet Sauvignon in limited quantities, with grapes sourced from 16 trusted local growers. The Cabernet Sauvignon grapes (with a small addition of Cabernet Franc) come half from the valley and the other half from the hills, in the areas of Oak Knoll, Oakville, Rutherford, St. Helena, Calistoga, and Mount Veeder. The variety of volcanic and sedimentary soils, the different exposures and altitudes, and the different clones create a wine of great complexity and elegance. After harvest and vinification, the finished wine ages for 18 months in French oak (70% new). The result is a dense and balanced wine, which has already been recognized twice in the Wine Spectator Top 100 Wines. Its aromatic profile is broad and intense with notes of plum, black cherry, and currant, berries and spices, cedar, chocolate, and tobacco leaves. On the palate, it is rich and bold, characterful and concentrated. It has mature, fine tannins and a refreshing, balancing edge. It is soft and round, with a long, complex finish featuring notes of cocoa and aromatic herbs. It is the ideal wine for a rib-eye steak or a hearty beef stew.
