Drink it now or cellar for up to 8 years. No need to decant, but best to open it half an hour before service. Founded by Jay Soloff, Chris Upchurch, Greg Lill, and his father Charles in 1992, DeLille Cellars is a Washington state winery producing top-quality Bordeaux blend wines from select sites. The Cabernet Sauvignon grapes for DeLille Cellars' Metier come from a selection of vineyards located in the Columbia Valley AVA. Here, the climate, characterized by significant temperature variations between day and night, favors slow ripening of the grapes, ensuring the development of fruity aromas and preserving natural acidity. The result is a wine that fully expresses the balance between body and aromatic character, typical of Washington State wines. On the nose, it reveals intense aromas of dark fruit such as blueberry, black cherry, and plum, along with hints of coffee and sweet spices. On the palate, it is soft, broad, and juicy, with good structure and a well-balanced acidity. The tannins are fine and well-integrated, and the finish is long and elegant. It is a full-bodied yet very balanced Cabernet Sauvignon with a lively and food-friendly character. Try it with grilled meats, a roast leg of lamb, or a tasty burger.
