Located in Oregon, Seven Hills was founded in 1988 by Casey McClellan and is one of the leading wineries in the Walla Walla Valley, renowned for its excellent, sustainably produced Cabernet Sauvignons and Merlots. Seven Hills Walla Walla Valley Cabernet Sauvignon is produced with Petit Verdot, Malbec, and Syrah, along with splashes of Carménère and Petit Syrah. The grapes, selected by established winemakers who have worked with the winery for a long time, come from the area's finest terroirs at various altitudes around the AVA and grow on deep clay soils with fine silt over basalt and pebbly gravel. After fermentation, the finished wine ages in new American and French barrels (30%) for 15 months. In the glass, the wine reveals an intense garnet color. Its aromatic profile is broad and pronounced, with notes of blackberry, plum, black cherry, and berry fruit alternating with herbal, earthy notes and mineral nuances. On the palate, it is rich, dense, and supple, with surprising fruit concentration and fine, well-integrated tannins. It is a characterful and balanced wine with a long, lush finish that recalls notes of chocolate. Try it with pulled pork or a nice, juicy steak.
