Théo Dancer took over the family business in 2020, expanding production with a small négociant operation. His philosophy is based on low yields, a respectful approach to terroir, and natural winemaking techniques that allow the grapes to fully express themselves. The Aligoté grapes come from vineyards located near Nantoux on the plateau overlooking the Pommard denomination, in the Hautes-Côtes de Beaune. Here, at an altitude of approximately 400 meters, the vines are rooted in thin, calcareous soils, where the grapes ripen slowly, developing a broad aromatic profile. After harvest, fermentation occurs spontaneously with indigenous yeasts, and the finished wine then ages primarily in large barrels before a period in tank. The result is a balanced and complex wine with a fragrant character. On the nose, it reveals a broad and expressive bouquet with notes of aromatic herbs and menthol, fruity aromas of plum, grapefruit, and Granny Smith apple, followed by hints of chlorophyll and fir buds. On the palate, it is fruity, juicy, and energetic. It is rich, concentrated, and fresh, with a lively acidity that balances the taste and a light bitter aftertaste on a lingering spicy finish. It pairs deliciously with seafood, sushi, and oysters, and is a must-try with classic Burgundian dishes such as fried frog legs and snails.
