Since its first vintage in 2014, the winery has evolved, sourcing top-quality fruit—predominantly Nero d’Avola and Zibibbo—from premier regions like Adelaide Hills and McLaren Vale. Guest appearances from Italian varietals such as Arneis and Fiano add further intrigue. Playful releases like Astro Bunny and Piggy Pop have earned global acclaim for their vibrant, complex, and approachable personalities. Viticulture Cooler-than-average South Australian vintages in recent years, with no days exceeding 40°C (104°F), allowed the grapes to ripen slowly and fully develop their flavours while retaining natural freshness and acidity. Winemaking White grapes are harvested early to preserve acidity and achieve lower alcohol levels, with Fiano and Pecorino picked first, followed by aromatic varieties and reds a few weeks later. The wines are produced with minimal intervention to retain their lively, natural character.
