Perched on the rugged north Cornish coastline, this distillery is battered daily by fierce Atlantic winds—power that is harnessed by an on-site turbine, generating more energy than required and feeding the surplus back into the national grid. One of the few British distilleries to scratch ferment its own base spirit from molasses, it crafts a distinctive rum proofed to with Cornish spring water. The spirit is then steeped in spices for two weeks, developing layered notes of vanilla, orange and caramel, followed by a warming finish of nutmeg and cinnamon.
