Drink it now or cellar for up to 10 years. No need to decant, but best to open it half an hour before service. Located in France, in the prestigious Loire Valley, Gitton Père et Fils is a family-run winery founded in 1945 and currently managed by Pascal Gitton and his wife. The estate extends over 30 hectares of vineyards that benefit from varied soils and the typical microclimate of the central Loire Valley, with continental influences mitigated by streams, that promote slow ripening. The Sauvignon Blanc grapes come from a vineyard located over 200 meters above sea level and planted between 1961 and 1981, on flint soil with an eastern exposure. After manual harvesting, fermentation occurs spontaneously with indigenous yeasts, and the finished wine ages in Slavonian oak barrels for 10 months. In the glass, the Sancerre Les Herses Silex reveals a brilliant straw-yellow color and an expressive and fresh aromatic profile with notes of citrus and white fruit, floral and honeyed aromas. On the palate, it is elegant, savory, and lively, with a crisp acidity and a subtle, slightly smoky note that lingers on the long finish. It is a wine that can be cellared for several years or enjoyed now with grilled fish and seafood.
