Vineyard & Production The vineyards are situated in the highlands of the Peloponnese, benefiting from a cool Mediterranean climate where altitude preserves natural freshness and acidity. Sandy soils over limestone provide excellent drainage and contribute to the wine's characteristic minerality and precision. Fermentation takes place over two weeks in stainless steel tanks to preserve aromatic purity, followed by a minimum of three months on fine lees to build texture and subtle complexity.
