If you’re searching for a wine that captures the essence of Chablis in a bottle, look no further - Guillaume Michel's winemaking philosophy is centred on the importance of terroir-driven wines. The grapes used in Louis Michel & Fils' wines are harvested from some of the most esteemed vineyards in Chablis, most of which fall within a 2km radius of the winery itself. Located southwest of the town of Chablis, “Vaillons” is one of the largest Premier Crus in the region and is frequently divided into other, smaller Premier Crus. The 129-hectare patch of land is defined by its warmer climate, its Kimmeridgian soils, and the delicate, floral and sometimes spicy character of its wines. This is a blend of several Vaillons Premier Crus, replete with scents of pear, apple, lemon, toasted nuts and hints of tobacco. It is a warm and comforting wine - typical of this specific location. On the palate, the tasting experience blossoms with strong notes of minerality, and rich, all-encompassing flavours of green apple, peach, orange and other citrus fruits. The finish is refreshing, driven along by vivacious acidity and mineral notes. Serve this wine slightly chilled, with buttery scallops, smoked trout or a cheesy snack like gougères.
