Founded in 1921 in Piedmont, the Paolo Scavino winery boasts over 100 years of winemaking tradition and is today led by Enrico Scavino, son of Paolo and grandson of the founder, Lorenzo. The estate is located in Castiglione Falletto and extends over approximately 30 hectares of vineyards distributed across small parcels in the area. The Nebbiolo grapes for Paolo Scavino's Barolo are sourced from various crus distributed in the municipalities of Castiglione Falletto, Serralunga d'Alba, and Barolo. After fermentation, which occurs separately for each parcel, the finished wine ages for approximately 22 months, 10 of which in barriques and 12 in large barrels. The result is an elegant wine with a clear ruby color and a broad, complex aromatic profile. On the nose, the wine reveals notes of red fruits and wild berries, with mineral and spicy hints. On the palate, it is powerful and rich, balanced, and warm. It has a distinctive character and a well-defined tannic backbone. It is solid and fresh with a long finish that intertwines spicy and wild berry notes. Try it with stewed red meat or aged cheeses.
