Founded in 2012 in the Uco Valley in Mendoza, PerSe Winery produces mountain wines of extraordinary quality, at about 1500 meters above sea level in collaboration with the monks of the Monasterio del Cristo Orante. The Malbec grapes are sourced from Viña Unica del Monasterio, located in the Gualtallary denomination. This small vineyard located at the foot of the monastery, in the shade of a pine forest, was planted in 2010 by the monks. Here the vines sink their roots into a not very deep soil with a good limestone content. After manual harvesting and fermentation with indigenous yeasts, the wine rests in used oak barrels for 14 months before being bottled without filtration. PerSe Volare del Camino is a rich and characterful wine considered their "essential wine" by winemakers David Bonomi and Edgardo Del Popolo. On the nose, it reveals a fresh and fragrant aromatic profile with floral notes (typical of Gualtallary wines), aromas of ripe red fruits, and herbaceous and earthy hints. On the palate, it is mineral and smooth with firm and subtle tannins and a pleasant refreshing acidity. The finish is long and gently herbaceous. Try it with a juicy steak or game birds.
