Cellar for up to 5 years. Serve chilled. Antica Fratta was founded in the mid-1800s by a merchant called Luigi Rossetti who was enchanted by the local scenery around Monticelli Brusati and decided to convert the existing farmhouse on the property into a winery. Rossetti also created one of the estate’s unique features, its 1.7 km of cellars dug into the rock which are arranged in the shape of a Greek-style cross. In 1979 the winery was purchased by Franco Ziliani whose family is one of the most famous names in Franciacorta. Today Antica Fratta specialises in artisanal Franciacorta made according to time-honoured traditional methods. The grapes for the Brut are predominantly Chardonnay along with a small proportion of Pinot Noir, all sourced from the heart of the Franciacorta DOCG. The fruit is harvested by hand and the wine is aged on the lees for 24 months following the secondary fermentation. Antica Fratta’s historic cellars provide the perfect conditions for ageing thanks to the constant 16°C temperature and 60-70% relative humidity. The Brut is made with a low dosage of just 7 grammes per litre which gives a very subtle hint of sweetness on the palate. Fine bubbles and attractive citrus and stone fruit aromas make this an excellent aperitif or accompaniment to seafood, salads, and fish dishes.
