Pale & Dry X.O Centenaire is a landmark expression from Delamain, created to celebrate the centenary of the original Pale & Dry cognac crafted by Jacques and Robert Delamain in 1920. This elegant and light cognac embodies the house’s style of purity, refinement, and respect for nature, aiming to deliver the purest expression of the Grande Champagne terroir. The Centenaire edition celebrates both the heritage and the vision of the founders, while enhancing the defining characteristics of Pale & Dry. Blending & Ageing The Centenaire is made exclusively from eaux-de-vie sourced from vines cultivated in the Grande Champagne sub-region of Cognac, including Delamain’s own vineyards in Bellevigne. The blend is aged in old oak casks within semi-underground cellars, where naturally high humidity allows gentle reduction over time. Final reduction is limited to 42% using the progressive addition of “les faibles,” weaker eaux-de-vie at 15% alcohol, to intensify natural sweetness and aroma. No sweeteners or colouring are added, resulting in slight natural colour variation between blends, reflecting traditional craftsmanship and purity. Tasting Notes The bouquet is intense, revealing fragrant notes of ripe apricot, citrus, and subtle vanilla “rancio.” On the palate, it is light and delicate, developing layers of fruit with a powdery, dry finish. The Centenaire X.O delivers a naturally sweet, balanced experience with a long, elegant length.
