An Dulaman Irish Maritime Gin 50cl
An Dúlamán balances the unami freshness of the sea with soft juniper, citrus and spice notes which captures “Draíocht na Farraige” (the magic of the sea). This is done by using five locally harvested varieties of seaweed, as well as six other botanicals. This makes An Dúlamán as unique as the Donegal coast itself. An Dúlamán maintains its characteristic complexity and softness they have learned that Méabh (our still) likes a low ABV in the pot, and to run in a narrow temperature band to manage the delicate seaweeds. To top it off they take a divilishly narrow cut. This gin is the first gin distilled in Co. Donegal. Dúlamán is the name of an Irish folk song which relates a conversation between two seaweed collectors (it is also the name of one of their gin seaweeds). The coast around Sliabh Liag holds an extraordinary bounty for such foragers with their centuries-old knowledge of harvesting and harnessing the qualities of these natural products. An Dúlamán bottles are reminiscent of those found along the Donegal coast during the wrecks of the Spanish Armada. Each bottle is wax sealed and the batch number is linked to the lunar phases! Citadelle No Mistake Old Tom Gin 50cl
The Old Tom from Citadelle is has a delightful aroma of juniper, orange zest and cardamom which develops into floral softer notes of jasmine and honeysuckle. The flavours to be found on the palate is full bodied, elegant and has a sweet and sour profile of lemon zest, anise, almond and long lasting spices with that classic Old Tom style sweetness. Citadelle Old Tom has been aged for 3 to four months in casks before it has been blended with some sugar to get that sweet style and is then added back to the casks for a further few months. The sugar used is toasted in copper cauldrons to give some caramelization.
