Aristocratico Appassimento is a full-bodied, richly concentrated red from Salento in southern Italy, crafted from Primitivo and Negroamaro using the traditional appassimento method. Produced by Enoitalia, a leading family-owned winery established in 1986 near Lake Garda, this is a wine of genuine power, warmth, and the soul of Puglia. Why You'll Love It The appassimento method, more commonly associated with Amarone in the Veneto , involves partially drying the grapes to intensify sugars, flavours, and aromas before fermentation. Applied here to two of Puglia's most characterful native varieties, the results are exceptional. Primitivo contributes deep, jammy dark fruit and warmth, while Negroamaro adds structure, spice, and the characteristic bitter-sweet depth that defines great Salento red wine. At 14.5% ABV, this is smooth and approachable yet complex enough to reward real attention. Vineyard and Production Primitivo and Negroamaro grapes are sourced from vineyards in Salento, Puglia, and partially dried using the appassimento method to concentrate sugars and flavours before fermentation begins. Careful fermentation and ageing produce the wine's characteristic concentrated, velvety texture and depth of character. Tasting Notes Deep ruby-purple in the glass, Aristocratico Appassimento opens with aromas of ripe plums and raisin. The palate is concentrated, smooth, and velvety, with rich notes of dried fig, warm spice, and tobacco, finishing long and satisfying with real southern Italian character. Bursting with red berry and forest fruit aromas, with a smooth, fresh palate. The grapes are grown on the soils of Naoussa in northwest Greece, so bring a little bit of Greek sunshine with them. It's vegan and vegetarian friendly too.
