Vermentino Coquille de Mer is a fresh and vibrant dry white wine from the Languedoc-Roussillon region of southern France, made from Vermentino grapes grown within sight of the Mediterranean. The vineyard’s coastal influence and warm climate lend the wine bright citrus, tropical fruit, and delicate floral aromas, while maintaining crisp acidity and refreshing elegance. Hand-harvested at optimal ripeness, the grapes are carefully pressed and fermented at cool temperatures to preserve their natural vibrancy and aromatic purity. Meet the producer Marilyn Lasserre is a pioneering winemaker who has been instrumental in the resurgence of Languedoc wines since returning to France in 2008. Her wines are known for their balance, freshness, and expression of terroir. Production Grapes are harvested in the cool of dawn and early evening, then sorted and pressed. The juice is chilled in stainless steel tanks to clarify solids before undergoing fermentation at 13°C for three weeks to retain freshness and aromatic intensity. After fermentation, the wine is carefully racked through multiple tanks, lightly filtered, and bottled the following spring.
