The Baglio, the traditional courtyard at the heart of the estate, speaks to their commitment to preserving the authentic spirit of the region. Old vines cultivated between 300 and 600 metres above sea level on a blend of clay and volcanic soils produce wines of remarkable quality and character. U Passimiento is their most distinctive expression, using the passimento technique to concentrate the Nero d'Avola and create a wine unlike any other at this price point. Vineyard & Production Frappato grapes are harvested at optimal ripeness and undergo slow fermentation in stainless steel tanks to retain their vibrant freshness. The Nero d'Avola grapes are left to wither slightly on the vine in passimento style, concentrating their flavours and sugars before hand-harvesting and gentle pressing. Fermentation is carefully controlled at low temperatures, with natural sweetness achieved by halting fermentation through temperature control. The wine then matures in steel tanks to preserve its fresh, fruity profile. Tasting Notes Bright and intense aromas of red berries, cherries and ripe strawberries. Jam Jar Sweet Shiraz 2024

A fresh, fruity, semi-sweet Shiraz, sourced from vineyards around Paarl with a Rhône-like climate ideal for Shiraz cultivation. Bursting with aromas of ripe blueberries, blackberries, and raspberries, with subtle dark chocolate undertones. Balanced sweetness and lively acidity make it very approachable and easy to enjoy slightly chilled. Vineyard & Terroir Grapes grown mainly in Paarl, benefiting from warm winter periods followed by cool growing conditions, producing elegant wines with softer tannins and early drinkability. Winemaking Grapes were harvested early in the morning, destemmed, and cold macerated for two days. Fermentation occurred in stainless steel tanks with a combination of indigenous and selected yeasts over 12–14 days, followed by 5 days on skins. Malolactic fermentation took place in tank, with 20% of the wine aged on French oak for six months. A naturally sweet component is retained to add complexity and roundness.
