U Passimiento is their most distinctive expression, using the passimento technique to concentrate the Nero d'Avola and create a wine unlike any other at this price point. Vineyard & Production Frappato grapes are harvested at optimal ripeness and undergo slow fermentation in stainless steel tanks to retain their vibrant freshness. The Nero d'Avola grapes are left to wither slightly on the vine in passimento style, concentrating their flavours and sugars before hand-harvesting and gentle pressing. Fermentation is carefully controlled at low temperatures, with natural sweetness achieved by halting fermentation through temperature control. Kaiken Clásico Malbec is a vibrant, fruit-forward expression of Mendoza's signature grape — crafted by a winery with a compelling story. Named after the wild geese of Patagonia that cross the Andes, Kaiken was founded by the Chilean Montes team who made the same journey to establish vineyards in Argentina. The result is a Malbec of real character: ripe, expressive, and beautifully approachable. Why You'll Love It Sourced from the Agrelo zone in Mendoza at 950 metres above sea level, where Andean soils of silt, clay, sand, and stone push the vines to produce grapes of exceptional concentration and freshness. Kaiken combines fruit from its own vineyards (70%) with carefully selected partner sites (30%), focusing on balance, ripeness, and expressive varietal character. Partially aged in French oak for added depth — without losing the vibrant fruit that makes this wine so easy to love.
