A portion of the blend is passed through a spinning cone column to gently reduce alcohol while retaining aromatic intensity, producing a wine that is genuinely refreshing without sacrificing character. Vineyard and Production Cinsault and Shiraz grapes are harvested from the Western Cape and whole-bunch pressed. Fermentation is carefully controlled, followed by malolactic fermentation. A portion of the blend is passed through a spinning cone column to gently reduce alcohol while retaining volatile aroma compounds, before being reintegrated to create a balanced wine of approximately 11% ABV.
