Vineyard and Production The vineyards are rooted in calcareous clay soils enriched with marl, sand, lapilli, and lava slag, remnants of the ancient volcanic complex of the Alban Hills in Lazio. After gentle pressing with brief skin contact to achieve the delicate pink colour, fermentation takes place with selected yeasts at controlled temperatures below 20 degrees Celsius in stainless steel tanks.
