Clos de Gat Ayalon Valley is a bold, structured red from the foothills of the Judean Mountains in Israel, crafted by owner-winemaker Eyal Rotem from 19 hectares of limestone-rich vineyards bordering the historic Ayalon Valley. Founded in 1998 around an ancient Roman-era wine press, Clos de Gat produces wines of genuine depth, regional character, and Mediterranean soul. Vineyard & Production Grown in a Mediterranean climate on limestone-rich soils in the Judean foothills, the grapes are handpicked following rigorous selection and gently crushed before fermentation in open tanks. The wine is aged for approximately 18 months in new French oak barrels, racked periodically to refine texture and complexity, then bottled unfiltered to preserve purity and concentration. Tasting Notes Deep and expressive, the Ayalon Valley opens with aromas of blackcurrant, dark cherry, and Mediterranean herbs, lifted by subtle toasty oak. On the palate it is concentrated and well-balanced, with fine, integrated tannins, earthy complexity, and a long, elegant finish.
