Bright pale colour with some greenish hints. Typical nose of citrus with a slight mineral touch. Vigorous and tensed mouth with a deep intensity and clear aromas. A typical Chablis to be drunk on its freshness. Elegance and purity are the true words to describe our Chablis. What is important is that people get what they expect to find when opening a bottle of Chablis. With only 10 to 20% of oak barrel in the winemaking, amateurs will find the true essence of what the specific soil of Chablis gives.

Paul Cluver Chardonnay 2021

Paul Cluver’s Estate Chardonnay displays vibrant citrus and tangerine aromas, with hints of winter melon and subtle vanilla pod. The palate is bright and precise, with natural acidity giving focus and poise, complemented by a touch of salinity that enhances its elegance. Vineyard & Terroir Grapes sourced from Elgin, where cool days and nights preserve delicate fruit flavours and natural acidity. Winemaking Whole-bunch pressed and fermented 100% with wild yeasts in French oak barrels (26% new, 26% second fill, remainder 3rd/4th fill). Minimal lees stirring preserves freshness and vibrancy.
