Bird in Hand Sauvignon Blanc is a crisp and vibrant Australian white wine, showcasing the pure, expressive character of Sauvignon Blanc from the cool-climate vineyards of the Adelaide Hills. Bursting with fresh aromas of passionfruit, guava, and grapefruit, complemented by subtle snow pea notes, this wine delivers a lively, textured palate with bright citrus acidity and a clean, dry finish. Vineyard & Terroir The grapes are sourced from premium cool-climate sites in the Adelaide Hills, chosen for their ability to produce Sauvignon Blanc with intense aromatics, fine acidity, and excellent fruit purity. Careful vineyard management ensures optimal ripeness and flavour concentration. Winemaking Harvested at peak maturity, the grapes are gently crushed, destemmed, and chilled to preserve freshness. Only the purest free-run juice is fermented in temperature-controlled stainless steel tanks over 10–12 days, highlighting the vibrant fruit character while maintaining crisp acidity. Malolactic fermentation is avoided to retain the wine’s fresh, zesty style. Tasting Notes Bright, pale straw in colour, Bird in Hand Sauvignon Blanc offers lifted, punchy aromas of tropical fruits and citrus. The palate is fresh and delicate, with a textured mid-palate, lively citrus acidity, and a clean, dry finish. Cortese Vanedda Bianco Organic 2021
Intensely golden in colour, which comes from the skin contact and ageing in large oak botti. The prominent bouquet has notes of coconut and tropical fruit, with an undercurrent of gentle spices. On the palate, there is a richness, balanced by well-integrated acidity. Excellent structure and length. The wine is carefully de-stemmed and fermented on the skins for at least 2 days, after which they separate the wine from the skins and finish the fermentation in 30 hl oak botti. Following fermentation, the wine stays on the lees for at least 7 months and remains in bottle for a further 6 months before being released on to the market.
