Vineyard & Terroir The grapes are sourced from premium cool-climate sites in the Adelaide Hills, chosen for their ability to produce Sauvignon Blanc with intense aromatics, fine acidity, and excellent fruit purity. Careful vineyard management ensures optimal ripeness and flavour concentration. Winemaking Harvested at peak maturity, the grapes are gently crushed, destemmed, and chilled to preserve freshness. Only the purest free-run juice is fermented in temperature-controlled stainless steel tanks over 10–12 days, highlighting the vibrant fruit character while maintaining crisp acidity. Malolactic fermentation is avoided to retain the wine’s fresh, zesty style. Paul Cluver Riesling shows a pale green hue with expressive aromas of citrus blossom and fresh orchard fruit. The palate is delicate yet zesty, with lime notes and a textured mid-palate. A balance of natural residual sugar and vibrant acidity gives the wine a characteristic Riesling tension, complemented by a mineral core from shale-rich soils.
