Boccantino Fiano Appassito is a refined and aromatic white wine from the sun-drenched vineyards of Salento in Puglia , southern Italy . Made using the traditional appassimento method, where a portion of the harvest is partially dried to concentrate sugars and intensify flavour, this is a wine of real aromatic depth and elegance. Vineyard and Production Grapes are grown in the sun-drenched vineyards of Salento, benefiting from the Mediterranean climate and well-drained soils that allow the fruit to achieve optimal ripeness. Only the best fruit is hand-harvested, with a portion then undergoing partial drying to concentrate sugars and intensify aromatics. Fermentation is carefully controlled to preserve the natural character of the Fiano grape, and the wine is partly aged in wooden barrels for three months, adding subtle complexity without masking the varietal freshness.
