Bolney Wine Estate Blanc de Blancs 2021
' Bolney Wine Estates is considered as one of the pioneers of the English wine industry, with 50 years of experience under its belt. Located in the heart of rural Sussex, the first vines were planted in 1972 by Rodney and Janet Pratt, the parents of Sam Linter who headed the family business until recently. Half a century later, the expert team there work throughout the year to ensure the vines are perfectly tended to yield the highest quality grapes. Bolney now produces an array of award-winning red, white, rose and sparkling English wines. The winery won UK Wine Producer of the Year in the International Wine and Spirit Competition in 2012. Since then, it was also presented with the title of Winery of the Year 2017 at the UK Wine Awards. The estate has continues to invest in specialist machinery and, in 2019, it opened a new state-of-the-art winery. With the ethos Guided by Nature since 1972, sustainability is at the heart of the winery's operations. This includes practicing responsible waste management, installing solar panels on the winery's roof and using bottles that are 100% recyclable. '
Champagne Ayala Rose Majeur NV
' Ayala is one of the longest established Champagne houses, and one of the original twenty-six Grandes Marques, based in Aÿ in the heart of the region. Pioneers of producing the now expected drier style, this house is synonymous with The Roaring Twenties. Since 2005, Ayala has been under the ownership and guidance of Bollinger, and with increased investment coupled with access to some of the best vineyards, and an individual hand-made approach, these wines offer the highest quality but also great value for money. Made predominantly with Chardonnnay and an addition of a small proportion of Pinot Noir, from the best Crus of Montagne de Reims, Rose Majeur offers finesse and elegance. Low dosage allows the House style to be expressed with the wine spending an average of 3 years ageing on its lees and resting for four to six months after disgorgement. '
