Vineyard and Production Hand-harvested Grenache Blanc and Roussanne grapes from partner vineyards in Cairanne, including a Roussanne plot just 200 metres from the winery, are gently pressed and clarified by cold tank. The juice is fermented entirely in 300 to 400 litre oak barrels, a mix of new and four-year-old wood, chosen to enhance texture and natural character rather than impart strong oak flavours. The wine is aged in barrel for six months before filtration and bottling.
