Production Grapes are sourced from selected vineyards on Swartland's granite-rich alluvial soils, which produce low-yield, highly concentrated berries. The fruit is hand-picked and naturally fermented in stainless steel tanks. Around 30% of the grapes undergo whole bunch fermentation and 70% whole berry fermentation to enhance structure and complexity. Daily pump-overs guide fermentation, followed by malolactic fermentation in tank. A small portion (15%) is matured for several months in older 300-litre barrels to add subtle depth.
