Domaine Boutinot La Cote Sauvage AOP Cairanne is the flagship wine from Boutinot's estate in Cairanne, one of the Southern Rhone 's most prestigious crus. Characterised by its finesse and finely-grained texture, this wine showcases the famous argilo-calcaire soils of Boutinot's hilltop vineyards, slow winemaking, and 22 months of gentle maturation in old French oak. This magnum format is perfect for special occasions and extended ageing. Boutinot's hilltop vineyards, including the renowned La Pauline and Les Six Terrasses sites, benefit from classic argilo-calcaire soils of limestone pebbles over clay, creating wines with remarkable finesse and structure. Old bush vines are hand-harvested, vinified with only natural yeasts, and undergo a long cuvaison period with gentle remontage and manual pigeage. The 22-month maturation in mostly old French oak develops great concentration and complexity. The magnum format enhances ageing potential and is ideal for sharing at the table. Vineyard and Production Fully ripe Grenache , Syrah , and Mourvedre grapes are hand-picked from old bush vines on selected hillside slopes within Cairanne. Vinified traditionally with only natural yeasts, followed by a long cuvaison period with gentle remontage and manual pigeage. Matured for 22 months in mostly old French oak barrels. The grapes which make up this wine's blend come primarily from gravelly plots of land near to the Gironde estuary, a good environment for Cabernet-sauvignon. Les Griffons offers a vigorous and fresh tasting experience, full-bodied and clean, overflowing with energy. It can be laid down in the cellar or enjoyed right away.
