Made exclusively from Pinot Noir grown on the sun‑kissed slopes of the Camel Valley, it offers a refined, delicate style with a distinctly English freshness. The cuvée is named after Odo, the Bishop of Bayeux and former owner of the Chilworth Manor (having been gifted the estate by his brother William the Conqueror..!) Having undergone a second fermentation in bottle as part of the Classic Method of sparkling wine production, this wine has spent over 60 months on the lees before disgorgement. The result is a structured, dry site-specific English Classic Cuvée with firm acidity, fine mousse and a clear focus on balance and ageing potential.
