Cantine Pellegrino Passimora Nero d'Avola 2023

Cantine Pellegrino Passimora is a vibrant Sicilian red wine that captures the warmth and character of the island. Crafted from Nero d'Avola grapes that are gently dried in the Sicilian sun to concentrate flavour, it delivers a rich, fruit-driven style with real charm and persistence. A superb introduction to what western Sicily does best. Why You'll Love It Passimora is the kind of wine that wins people over immediately. The partial drying of the grapes, a technique that intensifies the fruit and transfers aromatic compounds from skins to pulp, gives this wine a depth and richness that belies its price. Soft tannins, a warm texture, and a long finish make it endlessly drinkable, whether with food or on its own. Vineyard & Production The Nero d'Avola grapes are grown in western Sicily on Terra Grande soils, a silty and clayey base rich in minerals. Vineyards sit at altitudes from sea level up to 200 metres, benefiting from warm temperatures and cooling winds that preserve freshness and aromatic intensity. After harvest, the grapes undergo a gentle sun-drying process before a long, thermo-regulated fermentation. The wine is then aged for 4 months in wood to add structure and complexity. Tasting Notes Deep red in colour. The nose offers delicate aromas of red fruits and pomegranate, with sweet notes of dried plum and candied fruit. On the palate, it is soft, warm, and persistent, with gentle tannins that provide balance and elegance through to a long, satisfying finish. Perfect Pairings Pairs beautifully with cured meats, seasoned and fresh cheeses, tempura vegetables, and hearty stews. Also excellent alongside grilled lamb, slow-cooked ragus, or a classic Sicilian caponata. The Blend 100% Nero d'Avola

Manos Negras Triuno Organic Malbec 2022

Alejandro Sejanovich is arguably Argentina’s most knowledgeable viticulturist. After 16 years as vineyard director at Bodega Catena Zapata—where he pioneered high-altitude vineyard planting and conducted ground-breaking Malbec clone research—he established Manos Negras. Here, Alejandro brings together his love of minerality, altitude, and latitude to produce some of Mendoza’s most terroir-driven wines. Each wine reflects a myriad of soil types and grape expressions, capturing the spirit of Argentina’s diverse landscapes. Winemaking The grapes are gently destemmed before a 3-day cold soak at 8°C. Fermentation is carried out with wild yeasts, at controlled temperatures below 22°C, with 2 pump-overs and 1 punch-down per day across 13 days. Full malolactic fermentation follows, before 6 months of maturation in new French oak barrels. Tasting Note Triuno embodies the three natural forces—earth, water, and sun—that define Mendoza’s viticulture. This Malbec delivers concentrated dark berry fruit lifted by a hint of black pepper. The influence of cool desert nights preserves acidity, giving balance, freshness, and a long, harmonious finish underscored by subtle oak spice. Viticulture The organic grapes for Triuno Malbec are sourced from Barrancas in Mendoza’s Primera Zona at 2,500 feet above sea level. The Finca La Flor vineyard sits on alluvial soils of silty light clay over a subsoil rich in rounded stones and calcium carbonate, lending a distinct stony minerality to the fruit. The region’s warm, sunny days and cool nights ensure ideal ripening conditions. Food Matching Pairs beautifully with lean red meats, roast pork, dark turkey meat, and tomato-based pasta dishes.
