Distillery & Production Produced at Caol Ila Distillery on Islay, founded in 1846 and situated on the shores of the Sound of Islay. The distillery uses clean water from Loch Nam Ban and traditional copper pot stills. The whisky is aged for 12 years in oak casks, creating a smooth, complex spirit with the distinctive Islay maritime character and gentle peat smoke. Tasting Notes Pale straw colour. The nose is subdued with citric fruitiness, a whiff of bath oil and dentist's mouthwash, fresh and appetising with little trace of smoke. With water, almond oil, old fashioned oilskins, fresh fruitiness, and a trace of olive oil emerge. Raasay Hebridean The Draam Single Malt Whisky is a lightly peated, fruit-rich expression that captures the essence of traditional Hebridean whisky with a modern twist. Crafted entirely on the Isle of Raasay, this flagship single malt is the result of a unique six-cask recipe developed by Master Distiller Alasdair Day. Two distinct spirits—peated and unpeated—are matured separately in first-fill American rye whiskey casks, fresh Chinkapin oak casks, and first-fill Bordeaux red wine casks. These are then expertly married to create a whisky of remarkable depth and elegance. The Draam was first introduced in 2021 and officially named in 2025 to reflect its identity and make it more recognisable on the back bar. It is bottled with natural colour and no chill filtration, preserving its full character and texture.
