Caperdonich 1992 The Octave 27 Year Old 56%
Distilled in 1992 at the Caperdonich distillery and rested for 27 years in oak casks and bottled in 2019. 1 of only 90 bottles. Cask number #4125633 For upwards of 40 years the team at Duncan Taylor have experimented by maturing whiskies in smaller casks with great success. Their research stemmed from the simple premise that there is more wood interaction with the whisky over a shorter period of time in a small cask than in a large cask, therefore allowing a more rapid melding of wood, air and alcohol. After a second maturation the octave casks have refined the whisky, enhancing its hue, taste, form and character. The flavour profile is gently expanded, a little more sophisticated with the commanding presence of a mature, well balanced Scotch Whisky.
GlenDronach 1993 30 Year Old Single Cask #6753 Single Malt
This exceptional single cask release from Glendronach marks the finale of their distinctive Cask Bottling series. Sourced from a single PX sherry butt and limited to just 595 bottles, this 30 year old single malt is a true collector's item. Bottled at natural cask strength and without chill filtration, it offers an authentic expression of the distillery's craftsmanship. The rich influence of the sherry cask shines through in its flavour profile. Expect a captivating nose of sherry-soaked bramble fruit, orange, and sultanas, intertwined with hints of chocolate praline, Demerara sugar, and Morello cherry fruitcake. The palate is equally luxurious, boasting dark stewed fruit flavours reminiscent of chocolate gateaux, balanced by savoury notes of leather, tobacco, and oak. The finish lingers satisfyingly, showcasing a harmonious blend of fruit, molasses, complex wood spice, and fine tannins.
